I was not successful in finding Keto Friendly chocolate to buy, so, I started playing around making my own Fat Bomb recipes. A friend mentioned that she didn’t like the name Fat Bomb and that evening I renamed them to Fat Kisses
Decided that I was going to use either Stevia or a blend of Stevia and Erythritol. Found two products that I like
Organic Pyure and Wholesome Organic Stevia Blend. Many use Swerve, however once I used the Pyure I didn’t look any further.
I started using Cacao Nibs, however they did not melt well. I switched to Trader Joe’s Sugar Free Cocoa.
Ingredients
coconut oil, melted 2 oz
shredded coconut 1 oz
almond meal 1 oz
cocoa powder 0.64 oz
zero calorie sweetener such as Organic Pyure or Wholesome Organic Stevia Blend 0.64 oz
Instructions:
Mix coconut, almond meal, cocoa powder & sweetner well
Add melted coconut oil and stir well to incorporate dry ingredients.
I chilled my candy mold in the freezer for about 30 minutes. You can also use small ice cube trays.
Either spoon or pipe the mixture into mold of your choice and freeze for 15 min. Store in the refrigerator.
